Let's eat green ep.6: Quinoa con rucola, anacardi e green dressing

Here we are at the end of our wonderful column: eat healthy, eat green.

For this sixth and final episode of Let's eat green we decided to offer you this fantastic salad of quinoa, together with cashew nuts, rocket it's a green dressing really amazing!


Ingredients for 4 people

For the quinoa

200 gr of quinoa
50 gr of rocket
Zest of 1⁄2 lemon
1 tablespoon lemon or lime juice
2 tablespoons of extra virgin olive oil
Salt to taste.

For green dressing

3 tablespoons of extra virgin olive oil
3 tablespoons of tahini
6 tablespoons of water
3 tablespoons of hemp seeds
1 and 1/2 tablespoons of apple cider vinegar
1 tablespoon of lemon juice
2 teaspoons of umeboshi vinegar
1 teaspoon of spirulina


Cook the quinoa for absorption, placing the quinoa in a saucepan along with twice its volume of
water and a nice pinch of salt. Cook covered for about 15 minutes or until it has completely absorbed
the water.
Crush the quinoa and season with oil, salt, lemon. Add the rocket and coarsely chopped cashews.
Prepare the green dressing by putting all the ingredients in a blender and blending at maximum speed for
30 seconds.
You choose whether to add the quinoa dressing or whether to serve it separately.
