Let's eat green ep.3: un pancake tira l'altro

        

In the third appointment of Let's eat green (here the second, for those who missed it) we explain how to prepare delicious Pancake based on chickpea flour. A little curiosity: it seems that the pancakes originate in ancient Greece, more precisely to Athens, and that the consistency with which we know them today is due to the brilliant intuition of the Americans of add yeast to the dough.

 

HOW TO PREPARE THEM

Ingredients for 2 people
1 cup of chickpea flour
3⁄4 cup of water
1 teaspoon of baking powder
1 handful of spinach
Coconut oil to grease the pot

Method
Put all the ingredients in a blender and blend at maximum speed until you get a smooth and homogeneous mixture.
Alternatively, use an immersion blender.
Grease a non-stick pan with a spoonful of coconut oil and remove the excess oil with kitchen paper.
Pour in a tablespoon of dough and when you see that it starts to bubble, turn it over and cook for another minute.
Arrange on a serving dish. Continue like this with all the dough.

Pairings
Excellent both with maple syrup, jam, or with avocado and smoked salmon.
